Today was Bridget's and my 2nd anniversary! It's crazy how fast time flies... Anyway, I made Bridget breakfast in bed. Well, I didn't make the breakfast in bed, I made it in the kitchen then brought it to her. :) Swedish Pancakes used to be our staple weekend breakfast, but I hadn't make them in awhile, so I figured it would be nice. It is a simple recipe passed down for generations (I think...). It was pretty easy to make them in our apartment because I knew where everything was. However, trying to quietly make pancakes in the dark in Bridget's parents' kitchen was another thing entirely. I found a whisk and the ingredients relatively easily (luckily there was just enough sugar...). Unfortunately, I couldn't find a griddle or skillet. This is kind of a necessity, and since digging in the cabinets would have made a huge racket, I went downstairs and dug through all of our stuff until I found our electric griddle. I pulled it out and set it up on the counter. Then I had to find a plastic spatula because our griddle is non-stick (like really non-stick). The only problem is that Bridget's parents normally use stainless steel pots and pans. And metal utensils. So, I had noticed some plastic silverware lying around and figured that way my best shot. So, there I was, trying to flip pancakes at 350 degrees with a plastic fork and my fingers, which still hurt from the furniture escapade on Sunday. And fingers burn pretty quickly at 350 degrees, so I had to be quick enough to avoid scorching my fingers, but slow enough to not rip the pancakes (Swedish pancakes are like crepes, so they're really thin). I'm sure it was quite a sight... But Bridget liked them, so it was a success! :)
Since Bridget was still feeling a little under the weather, I decided to make dinner instead of go out to eat (without telling her, so it was a surprise). So, we had macaroni and cheese, hot dogs, and ice cream. Just kidding... :) I like to cook, and could do a little better than that. :) Bridget took a nap in the afternoon, which worked well for me. So, I ran to the grocery store and got some stuff. Anyway, the grocery store took far longer than it should have, because everything was in the wrong place (well, compared to our grocery store in Ann Arbor). I passed this one lady like 8 times because I had to keep doubling back to look for stuff. I also walked quickly because I was on a mission, so it probably looked even funnier. But I ended up getting everything I needed (only had to call my mom once). :) But then I rushed back and started cooking. In about an hour and a half, I whipped up my mom's famous "Orange Delight", white lasagan, cheesy bread, and a key lime pie for dessert. :) Bridget woke up as I was finishing up and wasn't quite with it, so I let her figure it out as she slowly came to. She walked in the kitchen and was like, "Oh, are you making something?" "Yeah," I said. I kept going and she was looking around. I had her mom's iPad playing some music, which she mentioned wasn't quite my style (I turned on a love songs station). After another minute or so, she said with a questioning squint, "Wait a second... are you making dinner?" "Maybe," was my reply with a wink. :) She loved it. :) And I even added a little extra touch to the key lime pie. :)
